La ministra de Cultura, Milagros Germán, aseguró ante la UNESCO que el casabe es una de las herencias culinarias prehispánicas más trascendentales, cuyo uso se ha perpetuado con el paso del tiempo, razones por las que los saberes y prácticas en la tradición de este alimento deben ser valorados para ser incluidos en la Lista Representativa del Patrimonio Cultural Inmaterial de la Humanidad.
Germán ofreció estas declaraciones en la sede del organismo, en París, Francia, durante una intervención en la que presentó la candidatura para el citado reconocimiento, acompañada por representantes de Cuba, Haití, Honduras y Venezuela.
“Sin lugar a dudas, las prácticas y saberes en la tradición del casabe se conservan para nosotros como un símbolo de la alimentación que tuvieron los primitivos habitantes de nuestra isla”, expresó la funcionaria.
Asimismo, valoró que este alimento ha pervivido de generación en generación sin mutaciones y representa un elemento importante de lo que fueron y son los habitantes de la región del Caribe.
Germán destacó, además, la impronta del casabe como alimento base de la mayor parte de las comunidades que habitan en las Antillas y selva amazónica, el cual no solo fue importante para esos primeros pobladores del área, sino que todavía hoy se prepara y se consume.
“En el caso particular de mi país, República Dominicana, alrededor del casabe hay una industria artesanal que une a las familias, y varias asociaciones de mujeres y de madres solteras sobreviven gracias a esta tradición”, aseveró la ministra.
La titular de Cultura entregó el expediente para la candidatura a Firmin Matoko, subdirector general adjunto de la Prioridad África y de Relaciones Exteriores de la UNESCO, en compañía del ministro de Cultura de Venezuela, Ernesto Villegas; la viceministra de Cultura de Cuba, Kenelma Carvajal; la embajadora de Haití ante la UNESCO, Dominique Dupuy, y Carlos Maradiaga Melara, encargado de Negocios, Delegación Permanente de Honduras ante la UNESCO.
Se trata del primer expediente multinacional de su tipo en América Latina y el Caribe que es presentado ante el organismo internacional, por países en los que pueblos indígenas desarrollaron el uso de este alimento preparado a partir de yuca amarga o mandioca.
